The certainty that I know exactly what components are going into my body is what really appeals to me. I was, of course, inspired to make my own crackers at home, and I was amazed at how simple they were to put together.

Homemade Rosemary Cheese Crackers

If you haven’t experienced the joy of crafting your own crackers, prepare for a delightful surprise. This recipe is incredibly simple, requiring only a handful of ingredients, and can be completed in a mere 30 minutes.

Gather all-purpose flour, salt, cheese (I used parmesan), butter, heavy cream, and fresh rosemary. Through a simple process of mixing and rolling, you’ll bring these components together to form the dough, which can then be cut into rectangles and baked. Truly, it couldn’t be simpler!

Each batch yields between 30 to 40 crackers, and should you desire more, feel free to double or triple the recipe to suit your needs.

These crackers will keep beautifully in an airtight container for up to a week, although I must confess, they seldom last that long in my household. I also suggest letting the batch air-dry for a couple of hours. If not, they will be soft like a cookie. But, if that is what you prefer, go for it!

Fresh cut Rosemary

While the inclusion of rosemary adds a delightful touch, you may opt to experiment with your preferred combination of fresh or dried herbs.

Rosemary cheese crackers before baked

Homemade Rosemary Cheese Cracker:

  • A cup of all-purpose flour, plus additional as required
  • Half teaspoon salt
  • 1/2 C. grated cheese of your choice
  • 1/3 C. cold butter (diced)
  • 1/4 C. heavy cream
  • Coarse or flaked salt for sprinkling
  • Two tablespoons fresh rosemary (chopped) or use any herb you choose

Instructions:

  1. Preheat oven to 400°F
  2. In a large bowl, combine flour, salt, Parmesan cheese, butter, and chopped rosemary.
  3. If you have a pastry cutter, cut the cheese and butter into the flour mixture, until crumbley.
  4. Pour in the heavy cream and mix until your dough is formed.
  5. Roll out the dough on a piece of parchment paper, after dusting with flour to a thickness of ¼ inch using a floured rolling pin. Cut the dough into small, uniformly-sized rectangle pieces with a sharp knife or pizza wheel.
  6. Transfer dough rectangles on the prepared baking sheet. 1 inch space between each one. Make holes in the crackers using a fork.
  7. Lightly salt the tops and add fresh rosemary.
  8. Bake until lightly golden brown. (10 minutes)
  9. Allow the crackers to cool fully on the baking sheet.
